Bikini Recipe

Yields 10 servings

For the Clementine Cordial (yields 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g granulated sugar

To make the Drink (yields 850ml, to serve 10)

400ml decent vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine cordial (see above)
A few cranberries, to garnish
Mandarin essential oil, for finishing

Directions

Making the Syrup: Put all the components into a pot, heat until it reaches a gentle boil, mixing so the sugar melts. After that, take off the burner allowing it to cool completely. Decant to a sealable bottle, cap it keeping it chilled, it will last for around four weeks.

Preparing the Cocktail Base: Pour all the liquids in a sizeable container, let it rest for an hour, then filter it best through muslin, so it's fully clarified.

For serving: Pour 85ml from the batch mix to a cocktail shaker containing ice, and agitate carefully for one minute to chill. Pour to a chilled martini glass or similar, garnish with the cranberries adding the final touch with a quick spritz of the essential oil over the top.
